Try this Healthy Strawberry Banana Bread

My sisters and I have been taking our health serious lately; and, my sister Angie recently found a strawberry banana bread recipe that we couldn’t wait to try. What I love about this bread is that it’s flourless. Instead of flour this recipe uses oat flour—and instead of purchasing oat flour in the market she simply took some organic oat meal and ground it up in a food processor. Isn’t that so great?

One thing that really gets me, when I’m eating clean is my sweet tooth. I don’t think my sweet tooth will ever go away and I’m always looking for healthy alternatives to help satisfy that craving. I’ve turned to fruits when I get that ‘sweets urge’, and currently one of my favorite go to snacks when I need something tasty is cottage cheese with blueberries, raspberries, and diced strawberries. I also LOVE eating mangos—whenever I’m eating a mango I always think to myself, “ahh, nature’s candy”. For the most part I would only eat fruit when I felt like eating something sweet but my sister has been searching the seas of Pinterest and Instagram for more healthy sweets recipes that we could try. This recipe was found on the Instagram account @feelgoodfoodie.

Yes! It’s Friday; and, I’m happy to post about the latest cupcakes I’ve made. I absolutely love making cupcakes (even though I didn’t get to eat any of these). Making cupcakes is so much fun for me; and I love everything about making cupcakes—from using different color cupcake wrappers, choosing the frosting color, and lastly, using them for my cupcake topper photo-shoots.

While I was planning how I was going to make this cupcakes I thought, perhaps some people would love to see how I go about making them and here’s how I do it!

First, I flip through one of my favorite magazines, The FoodNetwork Magazine, and decide which color I’d like to use. I have a special issue that has a list of icing colors and the amount of food coloring drops needed to acquire the color I may desire; and, for this project I wanted to use the color Jordan Almond—which is listed at 12 drops of blue food coloring with 1 drop of red food coloring per 1 cup of icing. 

Second, I add two cups of store bought (non-creamy icing) to a bowl, add 24 blue food coloring drops and 2 red food coloring drops then mix. 


Third, I grab my wonderful collection of assorted cupcakes, and choosing my favorite ones. 

Lastly, I pipe the cupcakes and get them ready for their photo-shoot! I made new cupcake toppers using a cloud shaped craft punch, and hand stamped, hand cut toppers using my favorite stamps by Lawn Fawn. Aren't they super cute?








Photo-shoot days are always fun but adding cupcakes to the mix makes them even more exciting and I’m glad I was able to share this with you. My Green Enchilada Casserole

Like everyone—I have to make dinner for my family; and, like everyone I get tired of cooking sometimes; or, I’m too lazy to cook altogether. However, even if I’m not up for cooking I still like to prepare something that tastes’ great. Therefore, I love making one of my favorite dishes, Enchiladas—but I like to make them the lazy way!

Today I’m going to show you how to make my Green Enchilada Casserole. It’s so easy to make, and it tastes amazingly delicious. When I make this dish I also like to serve it up with some refried beans and white Mexican rice (it tastes the same as red Mexican rice, as far as herbs and seasoning, but I omit the tomato sauce).

Ingredients for Green Enchilada Casserole / Servings: 8-10

·         8-10 tomatillos
·         1 onion halved
·         3 garlic cloves
·         5 jalapeños
·         4 Boneless skinless chicken breasts’
·         16oz of Monterey Jack Cheese or Pepper Jack Cheese
·         Cilantro
·         30 tortillas
·         Salt
·         Pepper

Ingredients for Cream Sauce

·         Sour cream
·         1 lemon
·         Salt
·         Pepper
·         Small handful of cilantro

Instructions:

Step 1: Take your boneless skinless chicken breasts’, two garlic cloves, half an onion, a generous pinch of salt, pepper, and then place them into a pot. Bring to a boil, and then lower the flame until the chicken is fully cooked. 
Step 2: Peal your tomatillos, then place them in a colander along with the jalapeños and give them a good rinse. Next, place them in a medium sauce pan, and add the other half of your onion and the remaining garlic clove. Then cover with water and bring to a rolling boil. 


Step 3: While the chicken and green sauce are cooking go ahead and get started on grating the 16oz block of cheese. 
Step 4: Once the chicken is fully cooked, remove it from the pan and set it aside to cool. 
Step 5: Once the tomatillos and jalapeños have lost their vibrant color they’re ready to be blended into a wonderful sauce. So, take the tomatillos, jalapeños, garlic, and onion; and place it in the blender along with a handful of fresh cilantro. This is the most important step: This is where all the magic happens because the green sauce gives the casserole its entire flavor; therefore, add a generous amount of salt to this sauce. I always salt to taste I never really have a set amount of salt that I put in. What I do is give it a few shakes of my salt shaker, blend, taste, and repeat until I get the flavor I want. Just be careful when tasting because it’s really hot. Once it’s ready simply set it aside.


 Step 6: At this point your chicken should be cool to the touch, if it isn't give it some more time. But if it is you can start shredding!
Step 7: Now you’re ready to assemble but before you start assembly, preheat your oven to 375 degrees. 
Step 8: Next put a thin layer of the green sauce on the bottom of the baking dish to prevent sticking—no oil or butter is needed.

Step 9: Dip six tortillas into your mixture and lay them on the bottom of the dish. Add a small handful of the shredded chicken, and a small handful of cheese. 



Step 10: Repeat four more times until you’ve reached the top of the baking dish and pour the remainder of the sauce over the casserole.  Then place it into the oven until the cheese is melted (about 20-30 minutes). 
Step 10: After placing the casserole into the oven, go ahead and make your cream sauce. The cream sauce is basically half a cup of sour cream, juice of a lemon, salt, pepper, and a small handful of cilantro. Once all of those ingredients are in a small dish, give it a good mix and place in the refrigerator. This casserole is delicious on its own but this cream sauce adds so much more flavor—it’s not even funny. Trust me when I say this cream sauce is so amazing. Also, what I like to do at this time is start on my rice, refried beans, and Pico de Gallo. 
Step 11: After the cheese has completely melted remove it from the oven, serve, and enjoy!

DIY Cupcake Décor for Brides on a Budget

Wedding season is here—and I’m so happy that the DIY 100% handmade scene has been spreading rapidly these past years within the nuptial world because that means I get to share my DIY projects with you all! Brides today not only want a beautiful and unforgettable wedding, they also strive to have the most unique handmade items that can’t be bought anywhere in stores. Handmade favors and décor are now signature stamps of individuality at weddings—and that makes them even more exciting to attend.
DIY favors and party décor are not only 100% OOAK—they’re also relatively cheap to make! And not spending excessive amounts of money in the favors and décor department can help if you’re on a budget. So, today I wanted to share a simple yet stunningly beautiful cupcake topper that is sure to make guests’ huddle around your desert table.
Let’s get started!
1. Your choice of glitter paper (There is an ultra wide variety of glitter paper at most Joann’s craft centers)
2. A heart shaped craft punch (Can also be found at your local craft store or online)
3. Toothpicks
4. Glue (I prefer to use Tacky glue when paper crafting—it dries fast and clear)

Step 1: Punch your hearts out (LOL, that sounds funny)

Step 2: Place some glue in the middle of your heart and add a toothpick. Once you’ve applied to glue and picks to the amount of hearts needed let them dry for about 20-30 minutes.
Step 3: Apply the glue to another heart and just match it to the back side of the heart covering the toothpick.

Wow! That was easy. Once they’ve dried they’ll be ready to insert into your cupcakes like so…
